Potimarron Soup with Leeks
Recipe from Around My French Table, by Dorie Greenspan. The American counterpart to the French Potimarron, or Chestnut Pumpkin, is the Red Kuri Squash. One unusual quality of this squash is that it is not necessary to remove its peel before cooking, as it is completely edible.
